There is a version of the pizza business where almost nothing is made on site. The sauce comes in a can, the dressing comes in a jug, the dough comes in frozen. It is cheaper, it is faster, and it is a completely reasonable way to run a shop. It is just not how we do it.
The dough is mixed every day
Not weekly, not delivered frozen. Dough is on our prep list as a daily batch, and somebody makes it every morning before we open. It is the single biggest thing that separates a good crust from a forgettable one, and it is also the easiest corner to cut, which is exactly why we do not cut it.
Seven sauces, from scratch
Every one of these gets made in our kitchen rather than opened:
- Marinara
- Pizza sauce
- Pizza garlic sauce
- Bread stick garlic sauce
- BBQ sauce
- Hot sauce
- Mild sauce
Our pizza sauce and our marinara are two different recipes, made separately, because they are doing two different jobs. Plenty of kitchens use one for both.
And four more
- Italian dressing โ made here, which is why the house salad tastes like a house salad.
- Chicken marinade โ the chicken sits in something we mixed, not something that arrived pre-seasoned.
- Taco meat โ seasoned and cooked in our kitchen.
- Our cheese blend โ blended here rather than bought pre-shredded as one thing.
Why bother
Two honest reasons. The first is taste: a sauce you make yourself is a sauce you can adjust, and over enough years you adjust it until it is right. The second is consistency. When you control the recipe, a pizza in February tastes like a pizza in July, and a pizza on a Tuesday tastes like one on a Saturday night. When you are opening cans, you are at the mercy of whatever the supplier changed this quarter.
It is more work. It means somebody is in early making dough on a day they would rather not be. We think it shows up in the food, and we would rather you judge that for yourself than take our word for it.
